I think technically yes, but it would definitely be different. No crispy skin makes me sad. Also, you won't get quite the amount of yummy juices to mix with the potatoes on the pan.
A couple of thoughts if you were to do boneless breasts - 1) They have a different cook time than thighs, so if you're doing it all on a sheet pan, I'd give the potatoes a 20-25 minute head start or so. 2) Another option would be to do the chicken and potatoes separately, and do the chicken on the grill if you're worried about oven-baked breasts being too dry. 3) Lastly, no matter how you cook them, look for smaller, evenly sized breasts. Or maybe slice them into cutlets.
